Grilled corn with sweet and savoury glazes (Poht Ang)

INGREDIENTS

Savoury glaze version

  • 8 corn with husk and silk
  • 2 spring onions thinly sliced
  • 2 tbsp vegetable oil
  • 4 tbsp fish sauce
  • 1 tbsp palm sugar
  • 2 tbsp water

Sweeter glaze version

  • 8 corn with husk and silk
  • ½ cup spring onion thinly sliced
  • 1 cup coconut cream
  • 1 tsp fish sauce
  • 2 tbsp palm sugar
  • 1 tsp tapioca flour
  • 2 tbsp water

METHOD

  1. Preheat charcoal grill or a cast iron grill span at medium heat.
  2. When ready cook the corn for 15 mins, turning regularly until tender and nicely charred. Keep aside warm.
  3. In a bowl combine glaze ingredients (either savoury or sweet version).
  4. If selecting the sweeter glaze, pour in glaze mixture in a small saucepan and gently simmer over medium heat until it begins to thicken. Remove from heat and
    set aside to cool. Pull husk and silk off from the corns and generously brush with the glaze.
  5. If selecting the savoury glaze, pull husk and silk off from the corns and generously brush with the glaze and cook for a further 2 mins by rotating the corns on the grill.
  6. Place on serving plate and ready to savour!
