Pan fried fish and ginger (Trey Chien Khney)

Serves: 3


  • 1 whole Barramundi or Tilapia
  • 3 garlic cloves
  • 1 cup finely julienne ginger
  • ½ brown onion cut into thin wedges
  • 2 tbsp salted soya beans
  • ½ cup white vinegar
  • 2 tbsp brown sugar
  • 1 pinch of salt


  1. Pan fry whole fish in oil until cooked and skin crispy on both sides
  2. Meanwhile in a separate oiled pan, cook ginger and garlic until lightly brown and crisp
  3. Add brown onion and brown sugar and cook for 1 min
  4. Add vinegar and salt and gently stir all ingredients until reduced to a sticky and golden sauce
  5. When fish is cooked, transfer on serving plate and poor the sauce on the fish


  • Garnish with coriander for extra flavour
  • Add 2 pinches of salt in the oil when pan frying  fish if you enjoy crispy skin
  • Serve with steamed rice
